Popular Pakistani / Indian ground meat dish

Ingredients

1 medium red onion 1 kilogram / 2 lb ground meat 2 Roma tomatoes 1 lb of green peas / spinach / potatoes or other mix of vegetables Ginger root or ginger paste (2 tsp) 3-4 Garlic cloves or garlic paste (1 tsp) 2 tsp kosher salt (or to taste) 1 tsp ground cayenne pepper or chili powder 1 tsp ground coriander 1/8 tsp turmeric powder (or to taste) 2 tsp cumin seeds

Instructions

1. In a blender, blend garlic cloves, about a thumb size piece of ginger root, and Roma tomatoes with a small amount of water to facilitate better blending (if using pastes, add in step 3) 2. Add enough oil for a shallow fry, add chopped onions and fry until browned and of light color 3. Once onions are done, add in blended mixture and a small amount of water (to ensure onions do not burn) 4. Allow all water to evaporate until the mixture becomes paste-like (should be a rich red color) 5. Add meat to pot and mash with spatula or potato masher 6. Once beef cooked through, add spices (they could also be added in step 2 to the oil to bloom spices) 7. Reduce heat, and add vegetables. Put lid on and cook until firm or done to liking 8. Garnish with fresh cilantro and ribbons of fresh ginger
