Goodfellas Prison Sauce
An iconic pasta sauce for Sunday dinners
Ingredients
2 Tbsp extra virgin olive oil
2 pound sweet Italian sausage
1 pound beef shank
1 pound veal neck bones with meat attached
3 cloves garlic, sliced paper-thin with a safety razor
3 small onions (keyword: small), chopped
1 Tbsp tomato paste
1/2 cup red wine
(3) 28-ounce cans DOP San Marzano tomatoes
2 large stems fresh basil
1 large carrot, peeled and cut into three pieces
1 pound meatballs (optional)
3 pounds durum semolina pasta, cooked al dente
Instructions
1. Cut up onions and garlic.
2. Heat up stainless steel pot over medium-high heat with. some olive oil
3. Brown meats on all sides, except meatballs
4. Take meats out, throw in garlic. Cook until soft. Throw in onions and tomato paste, cook until translucent
5. Throw in tomatoes, crush up if needed. Mix everything well, add meats back in. Add carrot and basil
6. Let simmer on low heat for 4-6 hours, stirring every now and then to prevent anything from sticking to the bottom
7. 40-60 minutes before done, start making meatballs, cook almost all the way through. Throw into sauce, let them finish cooking with the sauce
8. Cook pasta about 20 minutes before sauce is done
9. When pasta and sauce are done, strain pasta, add pasta back into pot, add some sauce and butter / oil, and mix well
